Dough Preparation
- In a stand mixer, combine 4 cups of all-purpose flour, ¼ cup of sugar, and 1 packet of instant yeast. Gradually add 1 ½ cups of warm milk or water and ½ cup of melted butter, along with 1 teaspoon of salt. Mix with a dough hook on medium speed for 4–5 minutes until smooth.
Rise
- Cover the bowl with a clean kitchen towel and place it in a warm area for 30–60 minutes until doubled in size.
Shaping
- Preheat the oven to 450°F (230°C). Punch the dough down, turn onto a floured surface, divide into 12 pieces, and roll each into ropes before cutting into bite-sized pieces.
Boiling
- Bring 10 cups of water to a boil and add ⅔ cup of baking soda. Drop the pretzel bites into boiling water for 30 seconds before transferring them to a parchment-lined baking sheet.
Baking
- Prepare an egg wash with 1 egg, brush over each pretzel, sprinkle with coarse salt, and bake for 12–14 minutes until golden brown.
Serving
- Allow to cool slightly before serving. Best enjoyed warm with honey mustard dip.
