  • 1.5 cups warm milk or water Water at about 110°F can be used.
  • ½ cup melted butter Can substitute with coconut oil.
For the Baking Soda Bath
  • 10 cups water Serves as the base for the bath.

For the Egg Wash
  • 1 egg egg Can substitute with vegan egg wash.

Method
 

Dough Preparation
  1. In a stand mixer, combine 4 cups of all-purpose flour, ¼ cup of sugar, and 1 packet of instant yeast. Gradually add 1 ½ cups of warm milk or water and ½ cup of melted butter, along with 1 teaspoon of salt. Mix with a dough hook on medium speed for 4–5 minutes until smooth.
Rise
  1. Cover the bowl with a clean kitchen towel and place it in a warm area for 30–60 minutes until doubled in size.
Shaping
  1. Preheat the oven to 450°F (230°C). Punch the dough down, turn onto a floured surface, divide into 12 pieces, and roll each into ropes before cutting into bite-sized pieces.
Boiling
  1. Bring 10 cups of water to a boil and add ⅔ cup of baking soda. Drop the pretzel bites into boiling water for 30 seconds before transferring them to a parchment-lined baking sheet.
Baking
  1. Prepare an egg wash with 1 egg, brush over each pretzel, sprinkle with coarse salt, and bake for 12–14 minutes until golden brown.
Serving
  1. Allow to cool slightly before serving. Best enjoyed warm with honey mustard dip.
