  1. Season the chicken with kosher salt and ground black pepper, ensuring even coating.
  2. Sauté the yellow onion in olive oil for about 5 minutes until translucent, then add minced garlic for 1 more minute.
  3. Add sautéed onions and garlic to the slow cooker, layer with seasoned chicken, crushed tomatoes, chopped green bell pepper, sliced mushrooms, balsamic vinegar, and Italian seasoning.
  4. Cover and cook on low for 4-6 hours or high for 2-3 hours until chicken reaches 165°F.
  5. Shred the chicken or serve whole, ladling sauce over pasta, rice, or zucchini noodles.
