Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, and salt.
  3. In a large bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract until well combined.
  5. Gradually mix the dry ingredients into the wet mixture using a spatula.
  6. Gently fold in the caramel chips and optional chocolate chips.
  7. Drop rounded balls of dough onto the prepared baking sheets, leaving space between each.
  8. Sprinkle each unbaked cookie generously with flaky sea salt.
  9. Bake for 10-12 minutes or until the edges are golden brown and the centers remain slightly soft.
  10. Allow to cool on the baking sheet for about 5 minutes before transferring to a wire rack.
