Step-by-Step Instructions for Pretzel Bites
  1. In a stand mixer, combine all-purpose flour, sugar, instant yeast, and salt. Pour in warm milk and melted butter, then mix on medium speed for 4-5 minutes until you have a smooth and elastic dough.
  2. Cover the dough with a clean kitchen towel or plastic wrap and place it in a warm area. Let it rise undisturbed for about 30-60 minutes, or until it doubles in size.
  3. While the dough rises, preheat your oven to 450°F (232°C). In a large pot, bring 6 cups of water to a boil, then stir in 1/2 cup of baking soda until dissolved.
  4. Once the dough has risen, punch it down gently and divide into 12 equal pieces. Roll each piece into a ¾-inch thick rope and cut into 1-2 inch bite-sized pieces.
  5. Drop the pretzel bites into the boiling baking soda bath for 30 seconds. Use a slotted spoon to remove and transfer to a parchment-lined baking sheet.
  6. Brush the boiled pretzel bites with an egg wash, sprinkle a pinch of salt, and bake for 12-14 minutes or until golden brown.
  7. Allow pretzel bites to cool slightly before serving warm with honey mustard for dipping.
