  • 2 teaspoons instant yeast or active dry yeast

  • ½ cup baking soda for boiling solution

Method
 

Dough Preparation
  1. In a mixing bowl, combine warm water, yeast, and sugar. Let it sit for about 5 minutes until foamy.
  2. Gradually add all-purpose flour and salt, mixing until a shaggy dough forms.
Kneading the Dough
  1. Turn the dough onto a floured surface and knead for 5-7 minutes until smooth and elastic.
First Rise
  1. Place the kneaded dough in a lightly oiled bowl, cover with a kitchen towel, and let rise for about 45 minutes.
Filling the Pretzels
  1. Punch down the dough, divide into 12 pieces, flatten each piece, add mozzarella, and seal the edges.
Making the Boiling Solution
  1. In a large pot, bring water to a boil and stir in baking soda until dissolved.

  1. Drop each pretzel into the boiling solution for 30 seconds on each side, then place on a baking sheet.
