Ingredients
  

For the Salmon
  • 1 side salmon skin on and bones removed
  • 1 teaspoon salt cooking or kosher salt preferred
  • 1 teaspoon black pepper freshly ground
For the Honey Glaze
  • 1/4 cup honey maple syrup can substitute
  • 1/4 cup unsalted butter ghee or margarine works for dairy-free
  • 3 cloves garlic minced
For the Creamy Dill Sauce
  • 1 cup sour cream cream cheese or thick hummus for dairy-free
  • 2 tablespoon fresh dill or chives as substitute
  • 1 medium eschallot finely grated onion can be used
For the Holiday Tapenade
  • 1/2 cup dried cranberries or other dried fruits
  • 1/4 cup orange juice apple juice can substitute
  • 1/4 cup slivered almonds or other nuts, omit for nut allergies
  • 2 tablespoon parsley any fresh herb can substitute
For Garnish
  • 1/4 cup pomegranate seeds
  • 1 tablespoon lemon zest fresh lemon juice for drizzling

Method
 

Preparing the Salmon
  1. Thaw the salmon fillet and pat dry with paper towels. In a saucepan, combine garlic, butter, and honey over low heat. Simmer for 5 minutes until fragrant.
  2. Line a baking tray with foil and place the salmon skin-side down. Pour the honey glaze over and season with salt and pepper.
  3. Wrap the salmon loosely with foil. Preheat oven to 180°C (350°F) and bake for 15 minutes.
  4. Remove the foil to broil for 7-10 minutes until caramelized.
  5. Let the salmon rest for 10 minutes, then add the creamy dill sauce and holiday tapenade before garnishing.
