For the Sliders
  • 1 pack Frozen Crispy Chicken Strips Homemade fried chicken can be used as an alternative.
  • 1 cup Corn Muffin Mix Pancake or waffle mix works as well.
  • 2 large Large Eggs Flax eggs can be used for a vegan option.
  • 4 tablespoons Butter (Melted) Vegetable oil can be used as a dairy-free substitute.
  • 1 cup Buttermilk Mix milk with vinegar for a substitute.
  • 1 medium Jalapeno Omit or use milder peppers as desired.
For the Chipotle Honey Sauce
  • 1/2 cup Honey Agave syrup can be used as a substitute.
  • 2 tablespoons Chipotle Adobo Replace with your favorite hot sauce if desired.
  • 1 tablespoon Lime Juice Lemon juice also works.
  • 1 tablespoon Water Omit if no additional liquid is needed.
  • 2 cloves Garlic (Pressed) Garlic powder can be used if fresh is unavailable.
  • 1/2 teaspoon Salt

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Spread the frozen crispy chicken strips evenly on a baking sheet lined with parchment paper and bake for about 20 minutes.
  2. While the chicken is baking, preheat your waffle iron. In a large bowl, combine corn muffin mix, large eggs, melted butter, buttermilk, and finely diced jalapeño. Stir until smooth.
  3. Generously spray the waffle iron molds with nonstick cooking spray. Pour ¼ cup of the batter into each section and cook until steaming stops, about 3-5 minutes.
  4. In a small saucepan, combine honey, chipotle adobo, lime juice, water, pressed garlic, and salt. Bring to a gentle boil, then let it simmer for about 2 minutes.
  5. Remove the crispy chicken strips from the oven. Drizzle the chipotle honey sauce over the chicken and toss gently to coat each piece.
  6. To assemble the sliders, take one waffle as a base, place a piece of coated chicken on it, and add another waffle on top. Garnish with fresh cilantro if desired.
