- Preheat your oven to 350°F (175°C) and prepare your baking pan with grease or parchment paper.
- Cut cheddar cheese into small, evenly-sized cubes and set aside to come to room temperature.
- In a large mixing bowl, combine ground beef, eggs, grated Parmesan cheese, diced onion, salt, and garlic powder. Mix gently.
- Fold in the cheddar cheese cubes into the meat mixture until evenly distributed.
- Transfer the meat mixture into the prepared baking pan and shape it into a loaf form.
- Bake in the preheated oven for 50–60 minutes until the internal temperature reaches 160°F (71°C).
- Remove from the oven and let the meatloaf rest for 10 minutes before slicing and serving with ketchup and parsley.
