  1. In a large mixing bowl, whisk together flour, sugar, and salt. Cut in butter until crumbly. Gradually mix in water until dough forms. Chill for 2 hours.
  2. Peel, core, and slice apples, then toss with lemon juice. In another bowl, mix sugar, cornstarch, and spices. Combine with apples.
  3. Preheat oven to 375°F (190°C). Roll out larger dough disc into a rectangle, fit into jelly roll pan. Pour apple filling evenly over crust. Roll out second disc and cover, sealing edges.
  4. Brush crust with cream or egg wash. Cut slits in the top crust for steam. Bake for 40-45 minutes, until golden brown and bubbling.
