Method

Preparation Steps
  1. In a large bowl or zip-top bag, combine the lime juice and zest, garlic powder, cumin, chili powder, salt, honey, and avocado oil to create a flavorful marinade. Add the chicken breasts, ensuring they are well coated, and refrigerate for 8 to 24 hours.
  2. Preheat a grill pan over medium heat and lightly coat it with cooking spray. Remove the marinated chicken from the refrigerator and place it on the pan. Grill for about 5-6 minutes on each side until cooked through.
  3. While the chicken cools, prepare the spicy ranch dressing by mixing the ranch dressing with hot sauce in a small bowl until smooth.
  4. On large plates, distribute the chopped green leaf lettuce as a base. Evenly top each portion with sliced chicken, diced tomatoes, black beans, red bell pepper, avocado, corn, and sliced red onion.
  5. Finish off your salad by adding tortilla strips and a sprinkle of fresh cilantro. Squeeze fresh lime juice over the entire salad and drizzle your spicy ranch dressing generously. Serve immediately.
