  • 1 lb Ground Beef or ground turkey or plant-based meat
  • 1 Onion fresh preferred
  • 2 cloves Garlic minced
  • 2 cups Enchilada Sauce can replace with salsa or seasoned tomato sauce
  • 1 can Diced Tomatoes fresh tomatoes can be a substitution
  • 1 can Black Beans or pinto or kidney beans
  • 1 tsp Ground Cumin can substitute with taco seasoning
  • 1 tsp Chili Powder swap in paprika or a spice blend if needed
  • 8 slices Corn Tortillas can use flour tortillas
  • 1 cup Cheddar Cheese or use mozzarella or Colby Jack
  • 1 cup Monterey Jack Cheese can replace with another melting cheese
  • 1/4 cup Fresh Cilantro optional garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. Cook ground beef, diced onion, and minced garlic in a large skillet over medium heat for 6-8 minutes until browned.
  3. Stir in enchilada sauce, diced tomatoes, black beans, ground cumin, and chili powder; simmer for 5 minutes.
  4. Layer 4 corn tortillas at the bottom of the baking dish, add half of the beef mixture, then half of the cheeses.
  5. Repeat layers with remaining tortillas, beef mixture, and cheeses.
  6. Bake for 25 minutes until cheese is bubbly and slightly browned.
  7. Let the casserole rest for 5-10 minutes before serving, garnishing with cilantro if desired.
