  • 10 oz Fresh Spinach Well-drained

  • 2 cups Shredded Mozzarella Cheese Low-moisture for ghost shapes
  • 1/2 cup Grated Parmesan Cheese Pecorino Romano is a substitute

Step-by-Step Instructions
  1. Begin by boiling a large pot of salted water, then cook the lasagna noodles according to package directions until al dente, usually around 8-10 minutes. Drain the noodles and lay them flat on a clean kitchen towel to prevent sticking.
  2. In a medium bowl, combine the ricotta cheese with the well-drained, chopped spinach. Season the mixture with salt and pepper to taste, blending thoroughly until it's smooth and vibrant.
  3. Grab a 9x13 inch baking dish and spread a thin layer of marinara sauce across the bottom. Start layering your Ghostly Lasagna by placing noodles down first, followed by a generous scoop of the ricotta-spinach mixture, shredded chicken, and a sprinkle of mozzarella cheese. Repeat these layers until you use all ingredients, making sure to finish with a layer of sauce and a healthy topping of mozzarella.
  4. Using the leftover mozzarella, cut out playful ghost shapes. Arrange these mozzarella ghosts on top of your lasagna and place black olive slices on them to resemble eyes.
