Step-by-Step Instructions
- Begin by boiling a large pot of salted water, then cook the lasagna noodles according to package directions until al dente, usually around 8-10 minutes. Drain the noodles and lay them flat on a clean kitchen towel to prevent sticking.
- In a medium bowl, combine the ricotta cheese with the well-drained, chopped spinach. Season the mixture with salt and pepper to taste, blending thoroughly until it's smooth and vibrant.
- Grab a 9x13 inch baking dish and spread a thin layer of marinara sauce across the bottom. Start layering your Ghostly Lasagna by placing noodles down first, followed by a generous scoop of the ricotta-spinach mixture, shredded chicken, and a sprinkle of mozzarella cheese. Repeat these layers until you use all ingredients, making sure to finish with a layer of sauce and a healthy topping of mozzarella.
- Using the leftover mozzarella, cut out playful ghost shapes. Arrange these mozzarella ghosts on top of your lasagna and place black olive slices on them to resemble eyes.
- Cover the assembled Ghostly Lasagna with aluminum foil and bake in a preheated oven at 375°F (190°C) for 30 minutes. After that, remove the foil and sprinkle grated Parmesan over the top. Bake uncovered for an additional 10-15 minutes until the cheese is bubbly and golden brown.
- Allow the baked Ghostly Lasagna to cool for about 10 minutes before slicing into portions. Garnish each slice with fresh basil leaves or cracked black pepper.
