Preparation Steps
  1. Prepare the vegetables by combining potatoes and onions in the slow cooker. Drizzle with olive oil and season with salt, pepper, and paprika. Toss until coated.
  2. Layer the chicken breasts on top of the vegetables. Season the chicken with salt and pepper.
  3. Whisk melted butter, Parmesan cheese, garlic powder, onion powder, black pepper, and chicken stock in a bowl until smooth, then pour over the chicken and vegetables.
  4. Cover the slow cooker and set to High for 4.5 hours or Low for 6 hours. Check for doneness around the 4-hour mark.
  5. Sprinkle mozzarella cheese on top about 20 minutes before cooking time is completed.
  6. Serve hot, garnished with chopped parsley.
