- Preheat your oven to 400°F (200°C).
- Trim the chicken and cut it into bite-sized pieces, then toss with 1 tablespoon of olive oil.
- Cut baby potatoes in half, toss with 1 tablespoon of olive oil.
- Mix paprika, poultry seasoning, and black pepper together, then sprinkle onto chicken and potatoes.
- Spread seasoned potatoes on a baking sheet and roast for about 20 minutes until tender and golden.
- Heat a skillet over medium-high heat, add chicken, and sauté for 7-10 minutes until cooked through.
- Add butter and minced garlic to the skillet, stir until the butter melts.
- Fold in roasted potatoes and wing sauce, top with mozzarella, cover and let sit on low heat for about 5 minutes.
