- Preheat a large cast-iron skillet over medium heat for about 2 minutes. Add a tablespoon of olive oil and half the ghee, allowing it to melt and coat the pan.
- Introduce the cubed Yukon Gold potatoes along with minced garlic, dried thyme, oregano, sea salt, and black pepper. Sauté without stirring for 2-3 minutes.
- Stir and cook for an additional 8-10 minutes until the potatoes are fork-tender and crisp on the outside. Remove them from the pan and set aside.
- Increase heat to medium-high and add the remaining ghee. Once bubbling, add the seasoned sirloin steak cubes and sear for 2-3 minutes on one side.
- Flip the steak to sear all sides for another 2-3 minutes until they reach a deep, rich brown.
