Step-by-Step Instructions
  1. Preheat a large cast-iron skillet over medium heat for about 2 minutes. Add a tablespoon of olive oil and half the ghee, allowing it to melt and coat the pan.
  2. Introduce the cubed Yukon Gold potatoes along with minced garlic, dried thyme, oregano, sea salt, and black pepper. Sauté without stirring for 2-3 minutes.
  3. Stir and cook for an additional 8-10 minutes until the potatoes are fork-tender and crisp on the outside. Remove them from the pan and set aside.
  4. Increase heat to medium-high and add the remaining ghee. Once bubbling, add the seasoned sirloin steak cubes and sear for 2-3 minutes on one side.
  5. Flip the steak to sear all sides for another 2-3 minutes until they reach a deep, rich brown.
  6. Return the cooked potatoes to the skillet, stir to combine flavors, and heat through for 1-2 minutes. Garnish with freshly chopped parsley and serve warm.
