Step-by-Step Instructions
  1. Preheat your oven to 175°C (350°F) and prepare a 23x33 cm baking pan lined with parchment paper.
  2. Melt the unsalted butter and stir in cocoa powder until smooth.
  3. Add granulated sugar, large eggs, and vanilla extract, whisking until smooth.
  4. Fold in all-purpose flour, baking powder, espresso powder, and salt until just combined.
  5. Gently fold in mini chocolate chips and chopped cherries.
  6. Pour the batter into the prepared baking pan and bake for 25-30 minutes.
  7. Prepare the ganache by melting semi-sweet chocolate chips with heavy whipping cream until smooth.
  8. Drizzle ganache over brownies after they have cooled slightly, letting it set for 15-20 minutes.
  9. Slice brownies into squares after ganache has set and serve warm or at room temperature.
