Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking tray with butter or non-stick spray, then line it with parchment paper.
  2. In a large mixing bowl, beat together 1 cup of softened butter and 1 cup of sugar until light and fluffy, about 2-3 minutes.
  3. Add 3 room temperature eggs one at a time, mixing thoroughly after each addition until fully incorporated.
  4. In a separate bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, and 1 teaspoon each of chosen spices. Gradually fold this into the wet ingredients.
  5. Fold in 2 cups of mixed dried fruits gently with a spatula.
