Method
 

Step-by-Step Instructions
  1. If using fresh corn, cook it in boiling water for about 5-7 minutes until tender. Cut kernels off the cob. For canned corn, drain and rinse. For frozen corn, thaw and drain well.
  2. In a large mixing bowl, combine sour cream, mayonnaise, and softened cream cheese. Mix with an electric mixer or spatula until creamy and smooth.
  3. Add shredded cheddar cheese and shredded pepper jack cheese. Mix in garlic powder, onion powder, smoked paprika, chili powder, salt, and black pepper. Stir until evenly combined.
  4. Fold in prepared corn, chopped green onions, diced red bell pepper, and diced jalapeño for an extra kick.
  5. To serve cold, cover with plastic wrap and refrigerate for at least 30 minutes. For warm, transfer to a baking dish, top with additional cheese, and bake at 375°F (190°C) for 20-25 minutes.
  6. Garnish with extra chopped green onions, cheese, or cilantro before serving. Enjoy with tortilla chips, pita bread, or veggie sticks.
