Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Combine cubed sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper. Toss until well coated and spread on a baking sheet. Roast for 20-25 minutes.
  3. Season chicken with garlic powder, salt, and pepper. In a skillet, heat olive oil and pan-sear chicken for 5-7 minutes until cooked through.
  4. Whisk together Greek yogurt (or mayo), lime juice, sriracha, cumin, and paprika in a small bowl to make the sauce.
  5. Cook rice based on package instructions, fluff with a fork, and set aside.
  6. Steam or sauté greens until tender, about 3-5 minutes.
  7. Assemble bowls with rice, sweet potatoes, chicken, greens, and drizzle with the sauce. Garnish with cilantro or parsley.
