  • 1.5 pounds Baby Potatoes Halved.
  • 3 tablespoons Olive Oil

Cooking Instructions
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, toss the halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread the seasoned baby potatoes evenly on a baking sheet and roast for 20–25 minutes, flipping halfway through.
  4. While the potatoes are roasting, melt butter in a saucepan over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  5. Season your cod fillets with salt and pepper, then sear in a skillet with olive oil for 3-5 minutes per side until golden.
  6. Pour the garlic butter sauce over the cooked cod and allow the flavors to meld.
  7. Serve the cod with the crispy potatoes and garnish with fresh parsley.
