- Preheat your oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper.
- Melt 9 tablespoons of salted butter over medium heat for about 5-7 minutes until it turns golden brown.
- Whisk together the cooled brown butter, brown sugar, and granulated sugar until smooth. Add in the egg, heavy cream, and vanilla extract.
- In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add to the wet ingredients, folding gently.
- Fold in the semi-sweet chocolate chips until evenly distributed throughout the dough.
- Melt 2 tablespoons of salted butter and toast 3 cups of kataifi for about 5-7 minutes until golden brown.
- Spread half of the cookie dough into the prepared baking pan. Spoon the toasted kataifi and pistachio cream mixture over it, then top with remaining dough.
- Bake for 25-30 minutes until golden brown. A toothpick inserted in the center should come out clean.
- Let cool completely in the pan for at least 30 minutes. Lift out with parchment paper and slice into squares.
