Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper.
  2. Melt 9 tablespoons of salted butter over medium heat for about 5-7 minutes until it turns golden brown.
  3. Whisk together the cooled brown butter, brown sugar, and granulated sugar until smooth. Add in the egg, heavy cream, and vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add to the wet ingredients, folding gently.
  5. Fold in the semi-sweet chocolate chips until evenly distributed throughout the dough.
  6. Melt 2 tablespoons of salted butter and toast 3 cups of kataifi for about 5-7 minutes until golden brown.
  7. Spread half of the cookie dough into the prepared baking pan. Spoon the toasted kataifi and pistachio cream mixture over it, then top with remaining dough.
