- Wash 12 large strawberries under cold water, pat dry, remove stems, slice each in half lengthwise, and hollow out a small portion.
- In a chilled bowl, whip 1 cup of heavy whipping cream until stiff peaks form, about 5 minutes.
- In a separate bowl, mix together 8 oz cream cheese, 1/3 cup sour cream, 2/3 cup sugar, 1 tsp vanilla extract, and 1 tbsp lemon juice until smooth.
- Gently fold the whipped cream into the cream cheese mixture until well combined.
- Fill a piping bag with the cream cheese mixture and pipe it into each hollowed strawberry half.
- Sprinkle graham cracker crumbs over the filling and serve immediately.
