  • 1 kg Chicken marinated
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper freshly ground
  • 1 tsp Paprika smoked enhances richness
  • 2 tsp Curry Powder
  • 1 tsp Thyme fresh or dried
  • 1 large Onion finely chopped
  • 3 tbsp Vegetable Oil
  • 4 medium Roma Tomatoes fresh preferred
  • 1 medium Red Bell Pepper
  • 1 small Small Red Onion optional
  • 1 piece Scotch Bonnet Peppers adjust heat
  • 2 tbsp Tomato Paste
  • 1 tsp Garlic Powder or fresh garlic
  • 1 tsp Ginger Powder or fresh ginger
  • 1 cube Bouillon Cube
  • 2 tbsp Fresh Parsley or Cilantro for garnish
For Serving
  • 4 cups Fluffy White Rice
  • 4 pieces Fried Plantains

Method
 

Step-by-Step Instructions
  1. Marinate chicken with salt, black pepper, paprika, curry powder, thyme, and chopped onion; cover and let sit for at least 30 minutes.
  2. Heat vegetable oil in skillet, add marinated chicken, sear for 5-7 minutes on each side until golden brown.
  3. Blend Roma tomatoes, red bell pepper, small red onion, and scotch bonnet peppers until smooth; add to skillet and cook for 5-7 minutes.
  4. Stir in tomato paste and cook for 2 minutes until integrated.
  5. Combine tomato puree with cooked tomato paste in skillet; simmer for 10 minutes until thickened.
  6. Add garlic powder, ginger powder, and bouillon cube; adjust seasoning as needed.
  7. Return chicken to skillet; cover and simmer for 25-30 minutes, basting occasionally.
  8. Garnish with parsley or cilantro; serve hot over rice or plantains.
