- Preheat your oven to 350°F (175°C) and grease a 24-cup mini muffin pan with non-stick spray or a light coating of oil.
- In a blender, combine 1 cup of cottage cheese, 1 cup of rolled oats, 1 egg, 2 tablespoons of honey (or maple syrup), 1 teaspoon of vanilla extract, the zest of 1 lemon, 1 teaspoon of baking powder, and a pinch of salt. Blend everything until smooth and creamy.
- Transfer the blended batter into a mixing bowl and gently fold in 1 cup of fresh or frozen blueberries.
- Allow the batter to rest for about 5 minutes.
- Spoon the batter into the prepared mini muffin cups, filling each one about 3/4 full.
- Place the muffin pan in the preheated oven and bake for 18-22 minutes.
- Once baked, remove the pan from the oven and let the bites cool in the pan for 5 minutes.
