Method
 

Step-by-Step Instructions
  1. Cream together butter and sugar until light and fluffy, about 2–3 minutes. Beat in egg and vanilla until combined. Mix flour and salt in another bowl, then add to wet mixture until a smooth dough forms. Chill for at least 30 minutes.
  2. Preheat oven to 350°F (175°C). Roll chilled dough into 1-inch balls, place on a lined sheet, and flatten slightly. Press into the center to create a well. Bake for 10–12 minutes until edges are golden. Press wells again gently while warm.
  3. Blend cream cheese until smooth. Mix in pumpkin puree, brown sugar, pumpkin pie spice, vanilla, and heavy cream until creamy. Chill for at least 30 minutes to firm up.
  4. Once cookies are cool, fill the wells with peach-filled frosting. Top with whipped cream and sprinkle with cinnamon or nutmeg if desired.
