Mixing and Chilling
- In a large mixing bowl, combine the softened cream cheese, shredded sharp cheddar, sour cream, garlic powder, smoked paprika, onion powder, salt, and pepper. Using a hand mixer, blend the ingredients for 1-2 minutes until smooth and creamy.
- Once well mixed, place the cheese mixture onto a large piece of plastic wrap, shape into a ball, wrap snugly, and refrigerate for at least 2 hours, or overnight.
Coating and Shaping
- After chilling, unwrap the cheese ball and roll it in the crushed cheese crackers or pecans until fully coated.
- To create ridges, press a piece of twine or uncooked spaghetti against the sides of the cheese ball, then remove it for a textured look.
- Insert a pretzel rod or bell pepper stem into the top for a pumpkin effect, and garnish with fresh parsley leaves if desired.
Serving
- Before serving, allow the cheese ball to sit at room temperature for 15-20 minutes for easier spreading. Serve with dippers like crackers, pretzels, or vegetables.

Notes
Soften cream cheese properly for a smooth texture. Chill adequately to let flavors meld and achieve the right firmness for coating.
