Method
 

Step-By-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a 9x13-inch baking dish with olive oil.
  2. In a large skillet, add olive oil over medium heat and sauté diced onion for about 3-4 minutes until translucent.
  3. Add ground turkey to the skillet, cooking for 5-6 minutes until browned and no longer pink.
  4. Stir in minced garlic, diced red bell pepper, and cubed sweet potatoes. Add smoked paprika, cumin, thyme, salt, and pepper, cooking for another 3-5 minutes.
  5. Transfer the mixture to the greased baking dish, cover with foil, and bake for 25 minutes.
  6. Remove the foil, add shredded cheese on top, and return to the oven for an additional 10-15 minutes until cheese is melted and bubbly.
  7. Garnish with fresh parsley or cilantro before serving hot.
