Ingredients
  

For the Bowl
  • 6 ounces imitation crab Can substitute with real crab or shrimp.
  • 1 cup white or brown rice Can substitute with sushi rice or quinoa.
  • 0.5 whole cucumber Diced for easy incorporation.
  • 0.5 whole avocado Can substitute with sliced radishes.
  • 1 handful cilantro Can substitute with parsley.
  • 0.5 cup panko breadcrumbs Toasted for flavor.
For the Eel Sauce
  • 0.25 cup soy sauce Can use Tamari or coconut aminos.
  • 2 tablespoons sugar Brown sugar can substitute.
  • 2 tablespoons mirin Rice vinegar can be used as a substitute.
For the Spicy Mayo
  • 0.25 cup mayonnaise Greek yogurt can be substituted.
  • 1 tablespoon sriracha Any hot sauce can be used as an alternative.
For Toasting Panko
  • 1 tablespoon olive oil Can be replaced with sesame oil.

Method
 

Step-by-Step Instructions
  1. Prepare the rice according to package instructions. Rinse 1 cup of rice under cold water until the water runs clear, then cook it in a medium saucepan with 2 cups of water.
  2. In a small saucepan, combine ¼ cup of soy sauce, 2 tablespoons of sugar, and 2 tablespoons of mirin. Heat and simmer until it thickens slightly.
  3. Dice the imitation crab, cucumber, and avocado. Chop cilantro and arrange ingredients in bowls for assembly.
  4. In a skillet, heat 1 tablespoon of olive oil. Add ½ cup of panko breadcrumbs and stir for 2-3 minutes until golden brown.
  5. In a bowl, combine ¼ cup of mayonnaise with 1 tablespoon of sriracha to make spicy mayo. Adjust spice level as desired.
  6. Scoop rice into bowls, layer with imitation crab, cucumber, avocado, drizzle with eel sauce and spicy mayo, and top with toasted panko.
