- Melt the butter in a skillet over medium heat. Add chopped onions and sauté for 5 minutes until soft.
- Stir in diced apples and dried cranberries. Mix with cooked rice, thyme, salt, and pepper. Allow to cool slightly.
- Preheat oven to 375°F (190°C).
- Rinse Cornish hens, pat dry. Drizzle with olive oil and season with salt and pepper.
- Stuff each hen with prepared stuffing, packing it tightly but allowing space for expansion.
- Place hens in a roasting pan, breast-side up. Roast for about 1 hour until golden brown and reaches 165°F (75°C).
