  • 1 medium Onion finely chopped
  • 1 cup Apples diced; pears can be substituted
  • 1 cup Dried Cranberries or raisins or other dried fruits
  • 1 teaspoon Dried Thyme or fresh thyme

Method
 

Step-by-Step Instructions
  1. Melt the butter in a skillet over medium heat. Add chopped onions and sauté for 5 minutes until soft.
  2. Stir in diced apples and dried cranberries. Mix with cooked rice, thyme, salt, and pepper. Allow to cool slightly.
  3. Preheat oven to 375°F (190°C).
  4. Rinse Cornish hens, pat dry. Drizzle with olive oil and season with salt and pepper.
  5. Stuff each hen with prepared stuffing, packing it tightly but allowing space for expansion.
  6. Place hens in a roasting pan, breast-side up. Roast for about 1 hour until golden brown and reaches 165°F (75°C).
