Step-by-Step Instructions
  1. Sear the ribs by patting them dry and seasoning with salt and pepper. Heat oil in a pot and brown the ribs for 4-5 minutes.
  2. Sauté chopped onions, diced carrots, and smashed garlic for 5-7 minutes until translucent and fragrant.
  3. Deglaze the pot with spiced apple cider and add beef stock, cinnamon sticks, star anise, and cloves. Return the ribs to the pot.
  4. Cover and braise the ribs in the oven at 325°F (160°C) for 2.5 to 3 hours until fork-tender.
  5. Prepare sweet potatoes by boiling in water for 15-20 minutes until fork-tender. Drain and return to pot.
  6. Mash the sweet potatoes with butter, rosemary, heavy cream, and salt until fluffy.
  7. Serve the braised short ribs on top of the rosemary mashed sweet potatoes and drizzle with cider sauce.
