- Sear the ribs by patting them dry and seasoning with salt and pepper. Heat oil in a pot and brown the ribs for 4-5 minutes.
- Sauté chopped onions, diced carrots, and smashed garlic for 5-7 minutes until translucent and fragrant.
- Deglaze the pot with spiced apple cider and add beef stock, cinnamon sticks, star anise, and cloves. Return the ribs to the pot.
- Cover and braise the ribs in the oven at 325°F (160°C) for 2.5 to 3 hours until fork-tender.
- Prepare sweet potatoes by boiling in water for 15-20 minutes until fork-tender. Drain and return to pot.
- Mash the sweet potatoes with butter, rosemary, heavy cream, and salt until fluffy.
- Serve the braised short ribs on top of the rosemary mashed sweet potatoes and drizzle with cider sauce.
