Preparation Instructions
- Preheat your oven to 350°F (175°C) and line an 8x8 or 9x9 square baking pan with parchment paper.
- Melt 0.5 cup of unsalted butter until liquefied and allow to cool for about 5 minutes.
- Combine the cooled melted butter with 1 cup of packed light brown sugar in a large mixing bowl and mix until smooth.
- Add one room temperature egg and 1 tablespoon of vanilla extract and whisk until fully incorporated.
- Gradually add 1.25 cups of all-purpose flour and a pinch of salt, gently folding into the batter.
- Dice 1 cup of fresh strawberries into small pieces and pat them dry with a paper towel.
- Fold the diced strawberries and 1 cup of white chocolate chips into the batter.
- Spread the thick batter evenly into the prepared baking pan and smooth the top.
- If desired, sprinkle 2 tablespoons of white chocolate chips on top of the batter and lightly press them in.
- Bake for 22–27 minutes, until edges are set but the center has a slight jiggle.
- Allow the bars to cool in the pan for 30 minutes before lifting them out using the parchment paper overhang and cutting into squares.
- Dust with powdered sugar before serving, if desired.
