Ingredients
  

For the Bars
  • 0.5 cup Unsalted Butter melted & cooled
  • 1 cup Light Brown Sugar packed
  • 1 number Egg room temperature
  • 1 tablespoon Vanilla Extract
  • 1.25 cups All-Purpose Flour
  • 0.125 teaspoon Salt a pinch
  • 1 cup White Chocolate Chips
  • 1 cup Fresh Strawberries diced small

  • 2 tablespoons Extra White Chocolate Chips for topping
  • Powdered Sugar for dusting

Method
 

Preparation Instructions
  1. Preheat your oven to 350°F (175°C) and line an 8x8 or 9x9 square baking pan with parchment paper.
  2. Melt 0.5 cup of unsalted butter until liquefied and allow to cool for about 5 minutes.
  3. Combine the cooled melted butter with 1 cup of packed light brown sugar in a large mixing bowl and mix until smooth.
  4. Add one room temperature egg and 1 tablespoon of vanilla extract and whisk until fully incorporated.
  5. Gradually add 1.25 cups of all-purpose flour and a pinch of salt, gently folding into the batter.
  6. Dice 1 cup of fresh strawberries into small pieces and pat them dry with a paper towel.
  7. Fold the diced strawberries and 1 cup of white chocolate chips into the batter.
  8. Spread the thick batter evenly into the prepared baking pan and smooth the top.
  9. If desired, sprinkle 2 tablespoons of white chocolate chips on top of the batter and lightly press them in.
  10. Bake for 22–27 minutes, until edges are set but the center has a slight jiggle.
  11. Allow the bars to cool in the pan for 30 minutes before lifting them out using the parchment paper overhang and cutting into squares.
  12. Dust with powdered sugar before serving, if desired.
