Step-by-Step Instructions
  1. Prepare the Raspberry Sauce: In a medium saucepan, combine raspberries, granulated sugar, and vanilla extract. Simmer over medium heat for 5–8 minutes until thickened. Strain to remove seeds and cool.
  2. Make the Cheesecake Filling: Beat cream cheese with sugar until smooth. Add the egg and vanilla extract, mixing well until lumps are gone.
  3. Prepare the Brownie Batter: Whisk together flour, cocoa powder, and salt. In another bowl, blend coconut oil, sugar, and vanilla, then gradually add eggs, mixing well.
  4. Combine and Prepare for Baking: Fold the flour mixture into the wet ingredients, pour into a lined baking pan, and spread evenly.
  5. Layer with Cheesecake and Raspberry Swirl: Pour cheesecake filling over brownie batter, drizzle raspberry sauce, and swirl gently with a knife.
