Step-by-Step Instructions
  1. Shred the sweet potatoes using a box grater or food processor and transfer to a large mixing bowl.
  2. Finely slice the onion and chop the scallions, then stir them into the shredded sweet potatoes.
  3. In a separate bowl, beat the eggs until frothy, then mix in the tapioca flour, sea salt, and baking powder, and fold into the sweet potato mixture.
  4. Heat oil in a frying pan over medium-high heat until it shimmers and reaches 350°F (175°C).
  5. Scoop portions of the sweet potato mixture into the oil and flatten with a spatula. Fry until golden brown and crispy, about 3-5 minutes per side.
  6. Drain cooked latkes on paper towels and serve while hot.
