Method
 

Step‑by‑Step Instructions
  1. Begin by dicing the red bell peppers and finely chopping the purple onion. Set all these ingredients aside in a large mixing bowl.
  2. In the large mixing bowl, combine the corn, diced bell peppers, and purple onion, gently toss the vegetables together until evenly mixed.
  3. Next, shred your cheddar cheese using a grater, add the cheese to the mixing bowl, and toss all the ingredients together gently.
  4. In a small bowl, measure out the mayonnaise for your dressing base, stir until smooth and creamy.
  5. Just before serving, drizzle the mayonnaise over the vegetable and cheese mixture and carefully fold to coat.
  6. At the last moment, break the Chili Cheese Fritos slightly into the salad for added crunch.
  7. Finally, scoop the salad into a serving bowl and enjoy!
