  • 2 large Cucumbers substitute with mini cucumbers for bite-sized pieces
  • 1 small Red Onion can replace with scallions for a milder taste
  • 1 cup Feta Cheese substitute with goat cheese if desired
For the Dressing
  • 3 tablespoons Olive Oil use extra virgin for the best flavor
  • 1 tablespoon Red Wine Vinegar substitute with apple cider vinegar if needed
  • 1 teaspoon Dried Oregano fresh oregano can be used in double the quantity
  • to taste Salt adjust quantities to taste
  • to taste Pepper adjust quantities to taste

Method
 

Preparation Steps
  1. Begin by washing the cucumbers thoroughly under cold water. Slice the cucumbers into bite-sized pieces, about half an inch thick. Place them in a large mixing bowl.
  2. Peel off the skin of the red onion and slice it thinly, around an eighth of an inch. Toss the sliced onion into the bowl with the cucumbers.
  3. Crumble the feta cheese into small pieces and add it to the mixing bowl, mixing it gently with the other ingredients.
  4. In a small bowl, whisk together extra virgin olive oil and red wine vinegar. Pour the dressing over the cucumber mixture.
  5. Sprinkle dried oregano, salt, and pepper over the salad. Toss gently to ensure all ingredients are coated.
  6. Let the salad rest for about five minutes before serving to allow flavors to meld.
