  • 1 pound Lean Ground Beef 90% lean preferred
  • 1 packet Taco Seasoning or homemade blend
  • 1 cup Red Enchilada Sauce or green for a twist
For the Cheese
  • 2 cups Oaxaca Cheese or Monterey Jack any melting cheese is fine
For the Tacos
  • 8 pieces Corn Tortillas warmed to prevent cracking
  • 2 tablespoons Olive Oil for brushing tortillas

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C) for about 10-15 minutes.
  2. Brown the lean ground beef in a large skillet over medium-high heat for about 5-7 minutes.
  3. Add the taco seasoning and red enchilada sauce, simmer for 2-3 minutes.
  4. Wrap corn tortillas in a damp paper towel and microwave for 30-60 seconds.
  5. Brush one side of each warm tortilla with olive oil and lay them oil-side down on a baking sheet.
  6. Sprinkle some cheese on one half of each tortilla, add a scoop of the beef mixture, and top with more cheese.
  7. Fold the tortillas over the filling and arrange them on the baking sheet in a single layer.
  8. Bake the tacos in the preheated oven for 16 minutes until golden brown and crispy.
  9. Cool the tacos for about 3 minutes before serving with salsa, guacamole, or queso.
