Cooking Steps
- Bring a large pot of salted water to a boil. Add rotini pasta and cook until al dente, about 8-10 minutes. Drain and rinse under cool water.
- Wash and dice the cucumber, carrot, sweet onion, and bell pepper into bite-sized pieces. Add to a large mixing bowl with olives and parsley. Toss gently.
- In a mason jar, combine yogurt, vinegar, lemon juice, garlic, onion powder, oregano, and dill. Shake for 30 seconds until creamy.
- Add cooled pasta to the vegetable mixture. Drizzle dressing over and gently toss to combine.
- Cover with plastic wrap or transfer to an airtight container and refrigerate for at least 1 hour.
- After chilling, stir gently, adjust seasoning, and serve garnished with parsley or dill.
