For the Tzatziki Dressing
  • 1 cup Plain Unsweetened Greek Yogurt Use dairy-free yogurt for vegan option.
  • 2 tbsp Red Wine Vinegar Apple cider vinegar is a good substitute.
  • 2 tbsp Lemon Juice Use fresh lemons for best flavor.
  • 2 cloves Minced Garlic Adjust according to taste.
  • 1 tsp Onion Powder Can be omitted if using fresh onion.
  • 1 tsp Dried Oregano Fresh oregano can enhance flavor.
  • 1 tbsp Fresh Dill Dried dill can be used but in lesser amount.

Method
 

Cooking Steps
  1. Bring a large pot of salted water to a boil. Add rotini pasta and cook until al dente, about 8-10 minutes. Drain and rinse under cool water.
  2. Wash and dice the cucumber, carrot, sweet onion, and bell pepper into bite-sized pieces. Add to a large mixing bowl with olives and parsley. Toss gently.
  3. In a mason jar, combine yogurt, vinegar, lemon juice, garlic, onion powder, oregano, and dill. Shake for 30 seconds until creamy.
  4. Add cooled pasta to the vegetable mixture. Drizzle dressing over and gently toss to combine.
  5. Cover with plastic wrap or transfer to an airtight container and refrigerate for at least 1 hour.
  6. After chilling, stir gently, adjust seasoning, and serve garnished with parsley or dill.
