  • 8 oz Spaghetti or Fettuccine Any pasta shape can be used.
For the Sauce
  • 4 cups Ripe Tomatoes Canned diced tomatoes are a good substitute.
  • 1 cups Heavy Cream Greek yogurt or cashew cream can be substituted.
  • 3 cloves Fresh Garlic Minced for even cooking.
  • 2 tbsp Olive Oil Extra virgin olive oil recommended.
  • 1 tbsp Basil Fresh or dried, with fresh preferred for fragrance.
Seasoning
  • 1 tsp Salt Essential for seasoning.
  • 1/2 tsp Pepper Freshly cracked is best.

Method
 

Step-by-Step Instructions
  1. Fill a large pot with salted water and bring it to a rolling boil over high heat. Add spaghetti or fettuccine, cooking until al dente, about 8–10 minutes. Drain the pasta.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 2–3 minutes until golden brown and fragrant.
  3. Stir in the diced ripe tomatoes and season with salt and pepper. Simmer for about 5 minutes, stirring occasionally.
  4. Lower the heat and pour in the heavy cream, stirring continuously until the sauce begins to thicken, about 2–3 minutes.
  5. Add the drained pasta into the sauce, tossing gently to coat every strand. Cook for an additional minute.
  6. Transfer to serving plates and garnish with fresh basil leaves and grated Parmesan cheese if desired.
