Step-by-Step Instructions
  1. Make Chimichurri Sauce: Whisk together Greek yogurt, mayonnaise, and minced shallot with parsley, cilantro, olive oil, red wine vinegar, minced garlic, and salt. Set aside.
  2. Season Chicken: Pat the chicken dry, mix garlic powder, kosher salt, and black pepper. Rub onto the chicken and let rest for 10 minutes.
  3. Cook Chicken: Heat avocado oil in a skillet, add the seasoned chicken, cooking for 6-7 minutes per side until 165°F. Let it rest before shredding.
  4. Sauté Jalapeños and Onions: Deglaze pan with water, add diced jalapeño and chopped red onion, sauté for 4-5 minutes.
  5. Combine Chicken: Shred chicken and mix with the sautéed jalapeños and onions, heating for 2-3 minutes.
