  1. Prepare mashed potatoes by making your red skin mashed potatoes, following your preferred recipe. This should take about 25 minutes. As they boil, season lightly with salt and set aside once mashed.
  2. In a bowl, combine cubed ribeye or NY strip steak with vegetable oil, smoked paprika, garlic powder, onion powder, Italian seasoning, kosher salt, and ground black pepper, letting sit for 15 minutes to enhance flavor.
  3. Heat a cast iron skillet over high heat and add a drizzle of oil. Place the seasoned steak cubes in the skillet to sear for about 2 minutes on each side until golden brown, then transfer to a plate.
  4. Reduce the heat to medium-low and add unsalted butter to the skillet. Once melted, sauté minced shallot and garlic for 1-2 minutes until fragrant and softened.
