Step-by-Step Instructions
- Prepare mashed potatoes by making your red skin mashed potatoes, following your preferred recipe. This should take about 25 minutes. As they boil, season lightly with salt and set aside once mashed.
- In a bowl, combine cubed ribeye or NY strip steak with vegetable oil, smoked paprika, garlic powder, onion powder, Italian seasoning, kosher salt, and ground black pepper, letting sit for 15 minutes to enhance flavor.
- Heat a cast iron skillet over high heat and add a drizzle of oil. Place the seasoned steak cubes in the skillet to sear for about 2 minutes on each side until golden brown, then transfer to a plate.
- Reduce the heat to medium-low and add unsalted butter to the skillet. Once melted, sauté minced shallot and garlic for 1-2 minutes until fragrant and softened.
- Return the seared steak bites to the skillet, tossing them in the garlic butter mixture to coat well. Reserve half for drizzling later.
- Pour heavy cream into the skillet and let it simmer for 2-3 minutes, then stir in parmesan cheese until melted and thickened. Season with salt and pepper as desired.
- To serve, plate creamy mashed potatoes topped with garlic butter steak bites, drizzled with the cream sauce and garnished with chopped parsley.

Notes
Avoid overcrowding the skillet when searing steak, and check doneness with an instant-read thermometer for perfect results.
