Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and leave an 8x5 inch loaf pan ungreased.
  2. Pour in granulated sugar into a medium saucepan, turn the heat to medium, and caramelize to an amber color, about 8–10 minutes.
  3. Blend together eggs, sweetened condensed milk, coconut milk, vanilla extract, and shredded coconut until smooth.
  4. Pour the blended mixture into the loaf pan over the hardened caramel layer.
  5. Place the loaf pan inside a larger baking dish and fill with hot water until halfway up the sides of the loaf pan.
  6. Bake for 55-65 minutes or until a toothpick comes out clean from the center.
  7. Once baked, let it cool on a wire rack for about 1 hour, then refrigerate for at least 4 hours or overnight.
  8. To serve, soak the bottom of the loaf pan in warm water for a few minutes, then invert onto a serving plate.
