- Preheat your oven to 400°F (200°C) and lightly oil a 9x13-inch baking dish.
- In a mixing bowl, combine cream cheese, tomato sauce, chicken stock, half of the fajita seasoning, salt and pepper. Mix until smooth.
- Place the chicken pieces into the prepared baking dish and sprinkle the remaining fajita seasoning over them.
- Pour the creamy sauce over the chicken, then layer the bell peppers and sliced onion on top.
- Sprinkle shredded cheese over the top to cover the layer.
- Bake for 15-25 minutes or until chicken reaches 165°F (74°C) and cheese is bubbly and golden.
- Optionally, broil for 2 minutes for extra crispiness.
- Let the casserole rest for a few minutes before serving. Top with sour cream and avocado slices if desired.
