  • 2 tablespoons Olive Oil or butter
  • 3 cloves Minced Garlic fresh preferred
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper to taste
  • 6 cups Fresh Spinach thawed frozen can be used
  • 8 ounces Cream Cheese softened
  • 1 cup Shredded Mozzarella Cheese
  • 1/2 cup Parmesan Cheese optional

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and grease a 9x13 inch baking dish.
  2. Cut the chicken breasts in half horizontally and pound them to about ½ inch thick.
  3. Mix olive oil, minced garlic, Italian seasoning, salt, and pepper in a bowl; marinate the chicken.
  4. Sauté fresh spinach in a skillet for 2 to 3 minutes until wilted.
  5. Beat cream cheese until smooth; fold in spinach and half of shredded mozzarella.
  6. Arrange marinated chicken in the baking dish and potentially sear each side.
  7. Spread the cream cheese mixture over the chicken in the dish.
  8. Sprinkle remaining shredded mozzarella over the top.
  9. Bake for 20 to 30 minutes until chicken is cooked through and cheese is bubbly.
  10. Let the casserole rest for about 5 minutes before serving.
