- Remove your 3.5 lbs brisket from the refrigerator 30 minutes prior to cooking. Rub with olive oil and season with salt, black pepper, thyme, rosemary, garlic powder, and onion powder.
- Dice and slice the yellow onion to enhance sauce flavor.
- Sauté the diced onions and minced garlic with the diced shallot in a saucepan over medium heat for about 5 minutes. Add cranberry jelly, Worcestershire sauce and Guinness, and let simmer for 10 minutes.
- Preheat your oven to 250°F (120°C).
- Pour half of the sauce into a roasting pan, place sliced onions, then lay the seasoned brisket. Pour remaining sauce, add potatoes and cranberries, and cover tightly with foil.
- Roast the brisket for 4 hours.
- Let the brisket rest for 30 minutes before slicing.
