Method
 

Step-by-Step Instructions
  1. Remove your 3.5 lbs brisket from the refrigerator 30 minutes prior to cooking. Rub with olive oil and season with salt, black pepper, thyme, rosemary, garlic powder, and onion powder.
  2. Dice and slice the yellow onion to enhance sauce flavor.
  3. Sauté the diced onions and minced garlic with the diced shallot in a saucepan over medium heat for about 5 minutes. Add cranberry jelly, Worcestershire sauce and Guinness, and let simmer for 10 minutes.
  4. Preheat your oven to 250°F (120°C).
  5. Pour half of the sauce into a roasting pan, place sliced onions, then lay the seasoned brisket. Pour remaining sauce, add potatoes and cranberries, and cover tightly with foil.
  6. Roast the brisket for 4 hours.
  7. Let the brisket rest for 30 minutes before slicing.
