  1. Preheat your oven to 400°F (200°C). Slice the acorn squash in half lengthwise and scoop out the seeds. Drizzle with olive oil, sprinkle with salt and pepper, place cut-side down on a parchment-lined baking sheet, and roast for 25–30 minutes until tender.
  2. In a large skillet over medium heat, add the Italian sausage and cook for 5–7 minutes until browned. Drain excess fat.
  3. Add diced onion and celery to the skillet and cook for an additional 3–4 minutes until softened.
  4. Stir in diced apple and fresh thyme, cooking for 2–3 minutes. Season with salt and pepper.
  5. Flip roasted squash cut-side up and fill with the sausage-apple mixture, packing it lightly.
  6. Return to the oven and bake for 5–7 minutes to allow flavors to meld.
