- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place puff pastry or flatbread on the baking sheet and roll it out if using puff pastry.
- Drizzle a tablespoon of olive oil over the flatbread and spread evenly.
- Thinly slice the pears and layer them over the flatbread.
- Evenly sprinkle the crumbled Gorgonzola cheese atop the pears.
- Bake the flatbread for 15 to 20 minutes until golden and crisp.
- Remove from the oven and drizzle honey over the hot flatbread.
- Sprinkle chopped walnuts and fresh arugula on top, and add cracked black pepper.
- Let it cool slightly before slicing and serve warm.
