Step‑by‑Step Instructions
  1. Begin by preparing your ingredients: chop the onion, mince the garlic, clean and slice the mushrooms, and thinly slice the seitan.
  2. In a skillet, heat olive oil over medium heat. Add onions and cook for 5-7 minutes until softened and golden.
  3. Stir in the minced garlic and cook for an additional 1-2 minutes.
  4. Raise heat to medium-high, add sliced mushrooms, and sauté for 8-10 minutes until browned.
  5. Push mushrooms to the side of the skillet, add seitan, and cook for 3-4 minutes.
  6. Sprinkle flour over the mixture, stir for 2 minutes.
  7. Gradually add vegetable broth while stirring, bringing to a simmer for 3-4 minutes.
  8. Stir in dairy-free sour cream, Dijon mustard, soy sauce, smoked paprika, and thyme; simmer for 5-7 minutes until thickened.
  9. Cook noodles according to package instructions (8-10 minutes), drain without rinsing.
  10. Toss cooked noodles with stroganoff sauce, garnish with parsley, and serve hot.
