  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Black Pepper
  • 1 cup Heavy Cream
  • 1/2 cup Parmesan Cheese grated
  • 2 cups Chopped Spinach
For the Tortellini
  • 2 cups Cooked Cheese Tortellini

Step-by-Step Instructions
  1. Heat the oil in a non-stick skillet over medium heat for about 2 minutes.
  2. Add shallots and garlic; sauté for about 3 minutes until fragrant.
  3. Cook tomatoes for about 10 minutes, pressing gently to release juices.
  4. Incorporate roasted red peppers, tomato paste, basil, and Italian seasoning; sauté for 2-3 minutes.
  5. Pour in heavy cream and let simmer for 5 minutes until thickened.
  6. Fold in tortellini and spinach; heat through for 2-3 minutes.
  7. Mix in Parmesan cheese, then season with salt and black pepper to taste.
  8. Serve in bowls, garnished with additional Parmesan cheese and fresh basil if desired.
