Step-by-Step Instructions
  1. Preheat your oven to 325°F (163°C) and spray each cup of a 12-cup muffin tin with cooking oil.
  2. In a large mixing bowl, crack open 8 large eggs and whisk them vigorously until frothy.
  3. Add a pinch of salt, a dash of black pepper, and 1 teaspoon of garlic powder to the eggs, mixing well.
  4. Gently fold in 1 cup of cottage cheese, 1 cup of shredded Colby Jack cheese, and ½ cup of bacon bits.
  5. Carefully divide the egg mixture evenly into the prepared muffin cups, filling each about ¾ full.
  6. Place a shallow pan filled with hot water on the lower rack of the oven to create steam.
  7. Position the muffin tin on the upper rack and bake for 23-25 minutes until set at the edges.
  8. Let the muffin tin cool for 3-5 minutes, then run a small knife around the edges to release the bites.
