Preparation Steps
- Preheat your oven to 375°F (190°C).
- Roll out your vegan pie crust until it’s about ¼ inch thick and place it into your pie dish.
- Melt 2 tablespoons of vegan butter in a skillet over medium heat.
- Add the diced onions, carrots, and celery, sauté for 5-7 minutes until softened.
- Stir in 2 cloves of minced garlic and cook for an additional minute until aromatic.
- Sprinkle in ¼ cup of all-purpose flour and stir, then gradually pour in 2 cups of vegan vegetable broth, mixing until thickened.
- Remove from heat and fold in the vegan chick’n pieces, frozen peas, thyme, salt, and pepper.
- Pour the filling into the pie crust, top with the vegan stuffing, and press gently.
- Bake in the preheated oven for 30-35 minutes until golden-brown and bubbling.
- Cool for about 10 minutes before serving.
