Ingredients
  

For the Pie Crust
  • 1 crust Vegan Pie Crust Store-bought or homemade
For the Filling
  • 2 cups Vegan Chick’n Pieces Gardein brand recommended
  • 1 cup Carrots Fresh or frozen
  • 1 cup Celery Chopped
  • 1 cup Onion Diced
  • 2 cloves Minced Garlic Fresh
  • 2 tablespoons Vegan Butter
  • 1/4 cup All-Purpose Flour Gluten-free flour can be used
  • 1/2 teaspoon Kosher Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Dried Thyme Leaves
  • 2 cups Vegan Vegetable Broth
  • 1 cup Frozen Peas
  • 1/2 cup Vegan Heavy Cream Or cashew cream or vegan sour cream
For the Topping
  • 1 cup Vegan Stuffing Store-bought or homemade

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. Roll out your vegan pie crust until it’s about ¼ inch thick and place it into your pie dish.
  3. Melt 2 tablespoons of vegan butter in a skillet over medium heat.
  4. Add the diced onions, carrots, and celery, sauté for 5-7 minutes until softened.
  5. Stir in 2 cloves of minced garlic and cook for an additional minute until aromatic.
  6. Sprinkle in ¼ cup of all-purpose flour and stir, then gradually pour in 2 cups of vegan vegetable broth, mixing until thickened.
  7. Remove from heat and fold in the vegan chick’n pieces, frozen peas, thyme, salt, and pepper.
  8. Pour the filling into the pie crust, top with the vegan stuffing, and press gently.
  9. Bake in the preheated oven for 30-35 minutes until golden-brown and bubbling.
  10. Cool for about 10 minutes before serving.
